Spit-Roast Cottontail



This is everyone's favorite around our house. Everyone likes it when I fire up the grill. This is an excellent way to BBQ rabbit.




1 whole rabbit, cleaned

1lb. Smoked Sliced Bacon

Fisher's All Purpose Seasoning (see recipe)

2 Chicken Bullion Cubes


4 Tbsp Salt




In a large plastic container dissolve bullion cubes and salt in about 1 quart of water. Place rabbit in container making sure the rabbit is covered with water. Place in refrigerator overnight. Remove rabbit and pat dry. Season the rabbit with Fisher's All Purpose Seasoning to your liking. Wrap bacon around the entire rabbit securing with toothpicks. Place rabbit on a rotisserie over a good size bed of charcoal. Cook for about 45 minutes or until done.


Serves 4


Serve with toasted sourdough French bread, beans, and a fresh salad.
