Mom's Rabbit Recipe
This recipe is one of my favorites for rabbit, usually cooked by my mom.
2 rabbits, cut up
1 white onion, sliced
1 tablespoon Worcestershire sauce
5 bacon strips
16 oz. can peas
salt & pepper to taste
Fry bacon then remove. Season rabbit with salt and pepper, brown in fry pan. Place sliced onion on top of rabbit, crumble bacon on top of onions. Cover loosely, simmer for 45 minutes. Remove rabbit to a platter. Add peas "including liquid," and Worcestershire to fry pan, simmer 5 minutes. Add enough flour to thicken slightly, pour over rabbit. Serve.
