Glazed - Stuffed Pig Chops



4 pig chops, cut 1 inch thick, with pockets sliced in center
2 slices raisin bread, toasted and cubed to 1/2 inch

1/2 cup chopped green apple
1/2 cup chopped pecans
1/4 teaspoon grated orange peel
1/2 teaspoon salt
1/4 cup orange juice
1/8 teaspoon cinnamon

dash of pepper


2 tablespoons sugar
1 tablespoon corn starch
1 cup apple juice
2 tablespoons butter

Heat oven to 350 degrees. In a medium bowl, combine bread cubes, apple, pecans, orange peel, salt, cinnamon and pepper. Stir in orange juice. Fill each pig chop with 1/4 of the stuffing mixture. Place chops in a 3x9 inch baking pan. Bake at 350 degrees for 30 minutes. Meanwhile, in a small saucepan, combine sugar and cornstarch; stir in apple juice. Cook until mixture boils and thickens, stirring constantly. Remove from heat and stir in butter. Pour evenly over pig chops and bake an additional 30 to 35 minutes.
