Pheasant Southwest




4 pheasant breast




1/4 cup lime juice

1/4 cup vegetable or olive oil

2 teaspoons parsley (chopped)

1 teaspoon garlic (chopped)




8 slices of cheddar cheese

1 cup of thick salsa (heated)

slices of avocado




Combine marinade ingredients in a plastic bag.  Add pheasant breast and marinade in the refrigerator for up to four hours.  Heat oven to 325 degrees.  Cook pheasant for 40 minutes.  Add cheese and salsa for the remaining five minutes.  Serve with rice.



This serves 4.
