Partridge Cacciatore




3 partridge - cut into pieces

1/2 teaspoon oregano

1/4 teaspoon mace

1/4 teaspoon powdered cloves

salt and pepper to taste

2 tablespoons olive oil

1/2 lb. mushrooms

2 onions, sliced

2 tablespoons butter

1 cup flour

1 cup tomato sauce

8oz can sliced olives

1 rib celery sliced

2 tablespoons chopped parsley

1/2 cup white wine


Shake the partridge pieces in a bag with flour, salt, and pepper. Heat oil in a fry pan, sauté the meat until golden brown.

Add onions, green pepper, celery, and parsley. Sauté for 2 minutes.

Move the contents to a casserole dish. Add the wine, oregano, mace, and cloves; cover, and simmer for 10-15 minutes-until meat is tender. In your fry pan sauté the mushrooms in butter for a few minutes, add the tomato sauce. Stir together with the sliced olives. Add this mixture to the casserole dish and serve. Serves 4.
