Salisbury Moose


This is another fairly simple yet delicious recipe. You can use moose, caribou, elk, or bear.


1 1/2 lb ground moose
1 egg
1/2 cup bread crumbs
1/4 cup white onion, chopped
1/2 tsp salt
2 cans golden mushroom soup
2 tbsp mustard
4 tsp Worcestershire sauce
2 tsp creamy horseradish sauce
1 can water

In a mixing bowl combine mushroom soup, mustard, Worcestershire sauce, horseradish, and water, mix well. Combine meat, egg, bread crumbs, onion, salt and 1/4 cup of sauce mixture, blend well and form into patties. Brown well in skillet then remove to a casserole dish. Pour sauce mixture over meat, cover, bake in the oven at 350 degrees for 30 minutes, serve hot. Mashed potatoes, corn and biscuits complement well.
