Honey BBQ Pig




1 pig roast, front or hind quarter




4 cloves garlic (minced)

6 scallions (chopped)

6 green onions (chopped)

1 onion (chopped)

1/2 green pepper (chopped)

2 green chilies (chopped) or 1 small can

1/2 jalapeno (chopped)

1 small can crushed tomato

1 small can tomato paste

1 teaspoon grated orange peel

1 16 ounce beer (optional)


1 teaspoon fennel seed

1 teaspoon rosemary

1 teaspoon garlic powder

1 teaspoon onion powder

1/4 teaspoon dry mustard

2 teaspoon basil

2 teaspoon thyme

1 teaspoon black pepper


1 cup honey

1/2 cup molasses

soy sauce




Cook garlic, onion, green pepper, chilies, and jalapeno in olive oil until tender.  Add crushed tomatoes, paste, and orange peel.  Dilute with water or beer and simmer for desired thickness.  Add spices and continue simmering.  Add honey, molasses, and soy sauce.  Simmer for about 5 minutes.


Preheat oven to 475 degrees.  Place pig in greased pan and sear in oven until pig is brown.  Cover the pig with the sauce, add water if needed.  Bake 2 hours until tender. Baste a few times before done.
