Gopher Stew



3 gophers, skinned and dressed
1/4 lb bacon 
5 white onions, chopped
3 16 oz cans tomatoes, whole
5 white potatoes, medium diced
thyme, minced fresh
2 clove garlic, chopped fine
1 heaping tbsp flour
pepper to taste
salt to taste
1 cup water

Boil gophers in salted water until tender. Fry bacon until done, dice fine. Add onions (and a little more oil if needed) sauté until browned, add tomatoes and simmer for 10 minutes. Place gopher in a large stock pot, add entire mixture from fry pan, add potatoes, thyme, garlic and pepper. Cover and simmer slowly for 2 hours. Dissolve flour in water then pour into pot, stir until thickened.
