Fillet O' Quail




2 Quail (de-boned and cut into strips)

olive oil

1/2 clove garlic (crushed)

dash thyme, pepper, and salt

1/2 teaspoon grated orange peel or 2 teaspoons of orange juice (optional)




Preheat oil and garlic in skillet.  Add strips of meat and coat with spices.  Cook uncovered on medium heat until golden brown on one side, then turn meat over and cover for second half of cooking time.  Meat is done when it pulls apart easily.
