Buffalo Chili Beans
Although the title says "buffalo," this recipe is excellent with any coarse ground wild meat. This recipe is so easy and you won't believe how good it tastes.
3 lbs. coarse ground buffalo
2 lb. chorizo
80 oz. "2 large cans" pinto beans
2 tablespoons bacon drippings
1 tablespoons fresh cilantro, chopped
1 brown onion, halved, sliced
16 oz. "1 can" whole tomatoes
2 jalapeno peppers, diced
½ cup water
Salt to taste
In a large fry pan, cook chorizo until done. Remove entire contents to a large pot. Heat bacon grease in fry pan, add buffalo, cook until done, add to chorizo. Add 2 large cans pinto beans "juice and all" to the pot. Stir and simmer until bubbling. Add onion, tomato "juice and all," salt, cilantro, water, and jalapenos. Cover and simmer over low heat for 2 hours, adding more water if necessary. Serve!
