Venison Back Strap Breakfast

 

 


To get into the feel of a deer hunting trip we usually take some back strap from a previous hunt and cook it up for breakfast our first morning of the trip. Embarrassingly, we take biscuits our wives made the day before because nobody knows how to make them over a camp fire or Coleman stove.

 

Ingredients:

 

12 pieces venison back strap

1 lb. bacon

1/4 cup flour

1 cup milk

water

salt and pepper to taste

 

In a large skillet, fry 1 lb. bacon until crisp, remove, set aside. Season venison with salt and pepper, roll in flour to cover. Place venison in bacon grease, fry on both sides until light brown, remove. Place biscuits in foil and begin heating them up. Add flour to grease and stir until browned. Add milk gradually, stirring constantly to mix. Add water gradually until desired thickness is reached. Add salt and pepper to taste. Place venison on plate add a couple biscuits, pour on the gravy, crumble bacon over gravy. Serve.
