The Chicken's Good Dad
Well, the name speaks for itself. Some say my kids are pretty easy to fool but they will tell you otherwise.
1 Whole Rabbit, cleaned and pieced
Fisher's All Purpose Seasoning (see recipe)
2 Chicken Bullion Cubes
1/2 Cup Bread Crumbs (I use Contadina)
1/4 Cup Milk
1 Cup Vegetable Oil
4 Tbsp Salt
In a large plastic container dissolve bullion cubes and salt in about 1 quart of water. Place rabbit in container making sure the rabbit is covered with water. Place in refrigerator overnight. Remove rabbit pieces and pat dry. Season the rabbit with Fisher's All Purpose Seasoning to your liking. In a medium skillet, heat vegetable oil. Dip the rabbit in milk then dredge in bread crumbs covering well. Place rabbit in hot oil and fry until golden brown.
Serve with mashed potatoes, steamed cauliflower or broccoli, bread and butter.
