Kyle's Tender Rabbit

 

 

 

 

1 rabbit de-boned

 

place in boiling water for at least 1/2 hour

 

remove rabbit from water and place pieces in 3" deep, glass dish or equivalent oven safe cookware.

 

cut up 2-3 onions and place in pan

cut up 2-3 garlic sections, very fine, place in pan

 

once all in pan,

pour in apple juice, enough to cover all pieces

 

place in oven at 325 for 2 hour, or until meat is tender, check often, may need to add apple juice or stir/rotate pieces.

 

makes a great finger food, or a side dish

the onions and the garlic and the rabbit come out with a touch of a sweet taste.  You'll love it...

 

*** this also works great for ducks, but need to boil duck a little longer.
