Duck Marsh Chili

 

I love to duck hunt. Some days divers (scaup, ringnecks, redheads) are all that's flying. They are not quite as tasty, to my taste buds, as most puddle ducks (mallards, teal, etc.) but I've found a way to turn them into a tasty meal.
 

Ingredients:

3-4 diver breasts, cut into 1/4-1/2" cubes
2 onions chopped
6 cloves garlic minced
minced chili peppers to your taste (make it hot with jalapeno or milder with green chili)
2 16oz cans stewed chopped tomatoes
2 16oz cans beans (black or pinto)
4 tbsp olive oil
1/4 tsp ground cumin
1 sprig cilantro

Sautee onions, garlic and duck in hot oil until onions are just clear. Empty entire contents of the fry pan to a crock pot. Add all remaining ingredients into crock pot. Stir it all up set the crock pot on low. Come home in the evening, put it in a bowl and enjoy.
