Ingredients:2 lb caribou steak, cut to 1" pieces
Sauté caribou in margarine until browned on all sides. Remove caribou and place in a large casserole dish, add potatoes, yams, onions, mushrooms. In the skillet mix 1-1/2 cup hot water, mushroom juice, chicken soup, brown sugar, salt and pepper. Heat until boiling then pour into casserole dish. Sprinkle onions rings over the top, cover, bake at 350 degrees. After 2 hours check to see if the caribou is tender, remove cover, bake for an additional hour, serve.
