Salt Crust Buffalo
1 10 lb Buffalo rib roast
2 large white onions, thinly sliced
2 heads of roasted garlic
2 3 lb boxes of kosher salt
1 cup of cool water
4 tbsp butter
2 tbsp sugar
Heat the onions in a skillet along with the butter. Add the sugar and cook this over low heat for about 1hour. Remove the skins from the garlic, crush the garlic and add this to the onions. Smear this over the top and sides of the buffalo roast.
Mix the cool water with the salt. Mix this until it is a thick paste. Cut a slit right in the center of the roast and stuff this full of the garlic and onion mixture. Make sure none of this is exposed to the salt or it will come in to this. I sometimes will take a piece of cheesecloth and wrap the meat in this and them proceed. Cover the roast with the salt. Set this on a large tray and let this set in the refrigerator overnight. The next day take this over and put on a baking rack in a 350 degree oven for about 3 hours or until it reaches at least 140. It will continue to cook. If you want this to cook until it is medium I would cook
it another hour. This is so nice. Bring this out and hit the crust with a hammer, and remove all of the salt crust.
